Save Money, Grilled Sandwiches Fit For a King

I love making these grilled sandwiches for lunch on the weekends, they beat going out to eat, are super cheap and delicious. Most of the time I just grab whatever left over meat we have in the refrigerator and throw something together. Yesterday I made the Roast Beef and Sauerkraut sandwich for the first time, it turned out pretty awesome, so I figured I would share a few of my favorites (one I haven’t tried yet). I keep the ingredients pretty simple and dont follow the directions to a ‘T’. Hope you enjoy and it saves you a few bucks.


Roast Beef and Sauerkraut Grilled Sandwich

This is one I just made up the other day and it turned out awesome!


  • Roast Beef (left over pot roast)
  • Sauerkraut
  • Onion
  • Bread
  • Butter
  • Mayo

To make this I used left over pot roast beef and used a fork to shred it. Put the roast beef on your bread with a very thin sliced onion, and sauerkraut. Spread the mayo on one of the slices. Put a slice of butter in a pan and turn up to medium high. when the butter has melted in the pan, use you spatula to pick up the sandwich and set it in the pan. Spread butter on the top slice of bread. Flip the sandwich when golden brown. Take the sandwich out to eat when both side are golden brown.


Bacon Avocado Cheese grilled Sandwich


I have not tried this one yet, but I cannot wait!!


  • 8 slices country-style sourdough bread, each 1/2 inch thick
  • 4 tsp. olive oil
  • 1/4 lb. cheddar cheese, thinly sliced
  • 8 bacon slices, cooked
  • 1/4 lb. Monterey jack cheese, thinly sliced
  • 2 ripe Haas avocados, sliced

Toasted Tuna Melt



  • one (1) 5 or 6-oz can of tuna packed in water, no-salt-added (my favorite is American Tuna)
  • 1 Tbsp mayonnaise
  • 2 (or more) Tbsp nonfat Greek yogurt (Fage 0% is my favorite)
  • 1 heaping tsp dill relish
  • 1 scant tsp sweet relish
  • 2 scallions, chopped
  • 2 Tbsp finely chopped celery
  • pinch of Kosher salt
  • few grinds of black pepper
  • 2 oz finely sliced (or grated) extra sharp cheddar
  • 4 slices sourdough bread
  • 1 tsp unsalted butter, softened

Tomato Pesto Cheese Grilled Sandwich

These are soooo good,




  • Bread
  • Mozzarella cheese
  • Ripe Tomatoes
  • Pesto sauce
  • Salt and pepper
